It's also extremely versatile: vegetarian, vegan, meat-based, and fusion-friendly.

Simple Weeknight Recipe: One-Pot Chana Masala

  1. Sauté 1 chopped onion until soft, add 2 cloves minced garlic and 1" grated ginger.
  2. Add 1 tbsp garam masala, 1 tsp turmeric, 1 tsp ground cumin, and 1 tsp ground coriander; toast briefly.
  3. Add 1 can diced tomatoes, 2 cans drained chickpeas, 1 cup water; simmer 10–15 minutes.
  4. Finish with a squeeze of lemon and chopped cilantro. Serve with rice or naan.
